No Bake Peanut Butter Pie

Our no-bake peanut butter pie is topped with peanut butter cups, chocolate covered peanuts and salted peanuts, held together with rich chocolate ganache.

For the Crust:
  • 10 ounces chocolate sandwich cookies
For the Filling:
  • 8 ounces cream cheese
  • 1¼ cups creamy peanut butter
  • 1 cup heavy cream
  • ¾ cup confectioner’s sugar, sifted
  • 1 teaspoon vanilla extract
For the Ganache Topping
  • ½ cup chopped, dark chocolate (or chocolate chips)
  • 3 tablespoons heavy cream
For the Crust:
  1. In food processor: Process the sandwich cookies to a fine crumb
  2. Press evenly into a 9-inch pie plate
  3. Freeze while preparing the filling
For the Ganache Topping:
  1. In a small micro-wave proof bowl or cup, heat the 3 tablespoons of cream
  2. Add chocolate
  3. Let sit for 5 minutes then stir until smooth
For the Filling:
  1. Whip the heavy cream to stiff peak and refrigerate
  2. In separate bowl, mix cream cheese and confectioner’s sugar on low until blended
  3. Add peanut butter until combined (mixture will be stiff)
  4. Add vanilla
  5. Add the whipped cream in thirds
  6. Pour into cookie crumb crust and chill for about 15 minutes
  7. Top with candy and/or nuts
  8. Drizzle with ganache
Chill for at least 4 hours before serving
