Green Beans with Caramelized Shallots

Cooked quickly to retain texture and color, the stir-fried green beans are dressed up with caramelized shallots that add loads of flavor. The stir-fried beans are blanched (plunged into boiling water for a few seconds) before stir-frying. This softens them slightly and knocks off the “raw” taste and has the added benefit of brightening the color.

Ingredients
  • 12 to 16 ounces fresh green beans
  • 2 to 3 shallots
  • 2 teaspoons olive oil
  • salt
Instructions
  1. Blanch the beans by adding them to boiling water for 60 to 90 seconds.
  2. If using haricot verts, only blanch 30 to 45 seconds.
  3. Drain the beans immediately and plunge into iced water to stop the cooking. Drain and set aside.
  4. Peel and thinly slice the shallots.
  5. Heat the olive oil in a skillet or wok.
  6. Cook the shallots over medium heat until caramelized and browned (about 10-12 minutes).
  7. Transfer shallots to small dish and set aside. Reserve skillet and any oil remaining in pan.
  8. Alternately, just push the shallots to one side of the pan
  9. Heat the skillet back up and add the beans.
  10. Stir-fry until the beans are cooked to desired doneness.
  11. Add salt to taste and toss with the caramelized shallots.
